Rheo F4 is a unique solution to analyze in a single test the dough proofing properties. It produces a complete analysis of the dough proofing capacities by measuring the carbon dioxide production, volume, permeability and dough tolerance during proofing. As it measures the pressure every 45 seconds, the total gas production (through the yeast's action) and gas retention (i.e porosity of the dough) is calculated using a sensor in the top of the dough that shows its development and stability so that optimum baking time can be determined.
